A simple note is an appointment without a patient record attached. You can use it in many ways, for example, to block a specific user time slot for booking, or assign a generic task for that particular date & time.
To add a new time slot, click on the empty calendar cell, the same way how you add new appointments, then switch from Appointment to the Note tab.

Start/End/Duration - filled automatically by default, can be changed;
Room - a calendar section (room name), filled automatically by default. can be changed;
Provider - assigned provider (dentist).
Note - you may keep this field empty, or add any text note.
Once you have added a calendar note, you can click on it to open the details. The details form looks the same as Create Note.
To delete a note, click on the note to open the details.
Click on the Delete Note button at the bottom to confirm.
